RECIPE / DAIRY FREE PINEAPPLE COCONUT MUFFINS

Ingredients / makes 12 muffins
1 3/4 cups flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
pinch of salt
1/2 cup melted coconut oil
1/2 cup almond milk
3/4 cup granulated sugar
1/4 cup brown sugar
1 tbsp vanilla extract
1 cup crushed pinapple
1 cup coconut chips
Directions /
Preheat oven to 400 °F
In a large bowl whisk together / flour, baking powder, baking soda, cinnamon, salt
Melt coconut oil and combine with warm almond milk
Combine warm coconut oil and almond milk with / granulated sugar, brown sugar, vanilla, coconut chips, crushed pinapple
Pour wet mixture into the dry mixture and fold together
Fill muffin cups approx. half full
Bake for 16-18 minutes
